I was craving for hawker food recently. Especially what I am cooking today. Fish head noodles soup 鱼头米粉 (Yu Tao Mai Fun) is a popular hawker food in Malaysia. It is believed to have originated from the Teochews. I was mentioning Hokkein but actually it is more Teochew as I suddenly remember the pickled plum and salted vegetable are very common ingredients for Teochew's dishes, especially steamed fish. It is one of my favourite fish soups with noodles. Here this is my first time trying to cook this. I must say I love it. My kids too. I am proud of myself. LOL!
Ingredients for 10 pax:
. 2 kgs grouper fish head, cut into big pieces. U can use any big fish head
. 2 pcs dried fish
. 2 pack thick rice noodles
. 2 pcs pickled mustard/salted veggies, cut into long strips
. 200 g young ginger, sliced thinly
. 5 tomatoes, cut into wedges
. 2 medium or 5 small size tofu
. 6 pickled plums, mashed or whole pieces
. oil
. 5 litres water
For marination of fried fish head:
. 2 tsp white pepper
. 5 tsp salt
. 4 cup cornflour flour, or tapioca flour
For seasoning:
. 2 tbsp fish sauce
. 1tbsp white pepper
. salt to taste (optional)
. 3 tsp sesame oil
. 1 can or 2 evaporated milk
. 6 tbsp Shao Xing Wine or more (optional)
Garnishing:
. spring onions, sliced or cut
Add-on: You can always add extra vegetable like Chinese cabbage or Chinese lettuce. Make sure you have this with cut chilis with soy sauce or some sourish spicy sauce. I also love adding fried onions in my soup.
I will cook this more often for sure.

Who doesn't like hawker food? We all miss sitting down in a hawker centre or kopitiam to makan right? So I bought these amazing nice fishballs and kuey teow/flat rice noodles, and thought I should make the simpliest ikan bilis/anchovies broth as the soup base. This soup is so easy to make. My Poh Poh used to cook for us, especially on her busy days. It takes less than half an hour to be ready.
Ingredients :
- 2.5 litres water (or depending on your portion)
- 20 Fish Balls or chicken fillets or fish fillets
- 1 whole lettuce or any kind of vegetable
- Salt to taste
- White Pepper
- 2 tbs Oil
- 1 pack Kuey Teow noodles or any noodles
- Hand full of Ikan Bilis
Do cut some fresh chilis with soy sauce to serve with it.

𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔
1 pack pork shoulder (sliced & then marinade 30 min with some sesame oil, light soy sauce, Lilo Premium Ikan Bilis Powder & scallop powder & cornflour)
1 Yellow onion (sliced)
Chopped garlic
Sesame oil
Stir fried meat paste
Lee kum kee oyster sauce & light soy sauce
Sugar & salt
𝑺𝒕𝒆𝒑𝒔
1. Heat up oil in wok on high heat. Add garlic and sauté till golden brown.
2. Stir in sliced yellow onion and fry till they start to soften.
3. Add in marinated sliced pork and fry till cooked.
4. Add Stir fried meat paste, oyster sauce and some water. Mix well.
5. Adjust to taste with sugar and salt.
Enjoy~ ❤️

■メキシコを感じるエビのセビーチェ
2人分
材料:
エビ 6尾
Aライムジュース 50ml
Aレモンジュース 20m
Aオレンジジュース 20ml(果汁100%のもの)
B玉ねぎ 1/4個
Bトマト 1個
Bきゅうり 1/2個
Bハラペーニョ 1/2個
Bパクチー 適量
塩 小さじ1
コショウ 適量
作り方:
1.エビは頭と殻を取り、背ワタを取り除いて身を6等分に切る。
2. Aを混ぜて(1)のエビを漬け込む。(2時間以上)
3. Bは全てみじん切りにする。トマトは中の種を取り除いてみじん切りに、ハラペーニョはワタとタネを取り除き、特に細かいみじん切りにする。
4.ボウルで(2)と(3)を和え、塩、コショウで味を調え冷蔵庫で1時間程冷やし、味が馴染んだら完成!
■タイ風エビのスイートチリマヨソース
2人分
材料:
エビ 180g
A塩 小さじ1
A片栗粉 大さじ1
Bマヨネーズ 大さじ3
Bスイートチリ 大さじ2
B牛乳 大さじ1
片栗粉 大さじ2
揚げ油 適量
フリルレタス 適量
作り方:
1.エビの下処理をする。エビのしっぽや殻をむき、Aの塩をふって揉み込み3分ほど置き、Aの片栗粉を揉み込んだら水でよく洗い水気を拭き取って、背に包丁で浅く切り込みを入れ背わたを取る。
2.Bをボウルに入れよく混ぜてソースを作る。
3.ビニール袋に片栗粉を入れ、(1)の海老を入れて均等に片栗粉をまぶす。
4.フライパンに揚げ油を熱し(3)をこんがりカリッと揚げ焼き、(2)と和える。
5.洗って水気をきり、ちぎったレタスを器にのせ、(4)を盛り付けて完成!

◆Shrimp Ceviche
Servings: 2
INGREDIENTS
6 shrimp
A
50ml lime juice
20ml lemon juice
20ml orange juice
B
1/4 onion
1 tomato
1/2 cucumber
1/2 to 1 jalapeno
Some cilantro
1 to 2 teaspoons salt
Some pepper
PREPARATION
1. Peel and devein the shrimp. Cut into small pieces.
2. Mix all A ingredients in a bowl. Marinate the shrimp in it (for more than 2 hours).
3. Chop all B vegetables.
4. Mix chopped vegetables and the marinated shrimp in a bowl. Season with salt and pepper. Refrigerate for 1 hour.
5. Enjoy!
◆Sweet Chili Mayo Shrimp
Servings: 2
INGREDIENTS
180g shrimp
A
1 teaspoon salt
1 tablespoon potato starch
2 tablespoons potato starch
Some frying oil
B
3 tablespoons mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon milk
Some frillice lettuce
PREPARATION
1. Peel the shrimp and season with salt (A). Leave for a few minutes. Add potato starch (A) to the shrimp. Rinse the shrimp with water and pat-dry with paper towels. Devein the shrimp.
2. Mix well all B ingredients in a bowl.
3. Put the shrimp in a plastic bag. Toss with potato starch to coat the shrimp.
4. Heat frying oil in a pan. Cook the shrimp (3) in the oil until crispy and golden. Mix the fried shrimp with the sauce (2).
5. Place rinsed lettuce leaves on a plate. Put some shrimp.
6. Enjoy!

夏に食べたくなるタコライスですが、そもそも「タコ」ってなに?と、思ったことはないですか?
メキシコ料理である「タコス」の具材をごはんにのせたことが由来となって「タコライス」と名付けられたみたいです。
今では沖縄の給食にも採用され、沖縄のソウルフードとして親しまれるようになりました。
沖縄に行った気分になって、ぜひ作ってみてくださいね♪
タコライス
2人分
材料:
合びき肉 170g
玉ねぎ 1/2個
にんにく 1片
Aケチャップ 大さじ3
Aウスターソース 大さじ1
Aしょうゆ 小さじ1/2
Aカレー粉 小さじ1
オリーブオイル 大さじ1
塩 ひとつまみ
温かいごはん お茶碗2杯分
レタス 40g
ピザ用チーズ 30g
ミニトマト 4個
アボカド 1/2個
作り方:
1玉ねぎ、にんにくはみじん切りにする。レタスは細切りにし、ミニトマトは4等分に切る。アボカドは皮と種を取ったら薄切りにする。
2.Aを混ぜ合わせる。
3. フライパンにオリーブオイルを熱したらにんにくと玉ねぎを入れて、しんなりするまで炒める。
4.(2)に牛豚合挽肉と塩を加えて炒め、色が変わったらAを入れて水気がなくなるまで炒める。
5.皿に温かいごはんを平くのせ、レタス、(4)、ピザ用チーズ、ミニトマト、アボカドの順にのせて完成!

Taco Rice
Servings: 2
INGREDIENTS
170g ground meat beef and pork
1/2 onion
1 clove garlic
1 tablespoon olive oil
Some salt
A
3 tablespoons ketchup
1 tablespoon worcestershire sauce
1 teaspoon curry powder
1/2 teaspoon soy sauce
2 bowls steamed rice
40g lettuce
30g shredded cheese
4 cherry tomatoes
1/2 avocado
PREPARATION
1. Chop the onion and the garlic. Shred the lettuce. Cut the cherry tomatoes into 4 pieces. Slice the avocado.
2. Mix all A ingredients.
3. Heat olive oil in a pan and stir-fry chopped onion and garlic.
4. Add the ground meat into the pan. When the meat is cooked, add A. Cook off all the excess water.
5. Put steamed rice in a bowl. Place lettuce, the meat (2), cheese, tomatoes, then avocado slices on top.
6. Enjoy!

1. 薑糖油膏
〔材料〕
薑 70公克/ginger 70g
糖 60公克/sugar 60g
醬油膏 120公克/thick soy sauce 120g
開水 40公克/boiled water 40g
〔作法〕
(1) 薑先打成薑末後,加入糖、醬油膏、水,再攪打到均勻即可。(小字:冷藏可保存7天)
2. 古早味薑糖蕃茄
〔材料〕
薑糖油膏 適量
甘草粉 少許/licorice powder q.s.
牛蕃茄 1顆/tomato 1pcs
〔作法〕
(1) 薑味沾醬加入少許甘草粉後攪勻備用。(小字:注意! 才是正宗古早味!)(甘草粉小字:甘草香氣增添風味)
(2) 蕃茄先切對半、去除蒂頭後切塊。
(3) 搭配作法1的沾醬食用即可。
3. 搭燙青菜
〔材料〕
薑糖油膏 適量
鹽 1茶匙/salt 1tsp.

A菜 300公克/Taiwanese lettuce 300g
〔作法〕
(1) 水煮滾後放入鹽、油和A菜,汆燙至菜葉軟嫩後撈起,瀝乾水分後淋上薑糖油膏即可。
4. 搭水煮肉片
〔材料〕
薑糖油膏 適量
蔥段 10公克/chopped scallion 10g
薑片 10公克/sliced ginger 10g
米酒 1大匙/cooking rice wine 1tbsp.
豬肉片 400公克/pork slices 400g
〔作法〕
(1) 水煮滾後放入蔥段、薑片、米酒與豬肉片,滾煮1~2分鐘至肉片變白、熟透後,只撈出肉片,淋上薑糖油膏即可。
