Pagi ini sarapan agak berat dengan nasi lemak.
Penyediaan paling cepat zaman sekarang dah boleh masak nasi lemak guna rice cooker.
Saya tak ada gadjet yang lebih canggih dan moden untuk masak nasi lemak😅
Rice cooker ni adalah hadiah pemberian dari kawan suami semasa hari perkahwinan kami.
Klasik sungguhkan...😊banyak jasanya pada kami..kami sungguh menghargai pemberian kwn².

Saya bukan nak cerita tentang rice cooker sebenarnya..😄
Hari ni saya nak berkongsi resepi nasi lemak dan sambal tumis dari air tangan saya.
Bahan nasi lemak utk 6 orang makan:
2 cawan beras di basuh dan di toskan airnya
3 cawan santan cair
½ inchi halia di mayang
1 labu bawang besar
2 helai daun pandan di simpul mati
Garam secukup rasa
Cara²nya:
1. Basuh beras dan toskan airnya,masukkan ke dalam rice cooker..ketepikan sebentar.
2. Masukkan santan cair,daun pandan,halia dan garam ke dalam rice cooker berisi beras.
3. Bolehlah dimasak beras & bahan² tadi menggunakan rice cooker.
4. Setelah masak,gemburkan nasi sedikit dan masukkan bawang besar dan gaul rata agar kena pada keseluruhan nasi yg telah masak tadi.
5. Saya tambah masa dalam 5 minit untuk pastikan nasi benar² masak dan aroma bawang naik wangi.
Bahan² & cara membuat sambal tumis pula..
Yang ini tiada sukatan yg tetap.Saya guna bahan ikut suka hati saya je ni😄
Cili kering saya rebus dahulu kemudian blend bersama bawang rose,bawang putih dan halia.
Panaskan minyak masak,tumiskan bahan² yg diblender.Masukkan sedikit gula,air asam jawa dan sedikit belacan..tumis hingga sambal bertukar warna menjadi kemerah²an.
Bila dah mendidih,masukkan bawang besar yang di potong bulat..gaulkan.
Masukkan garam secukup rasa.
Boleh juga campurkan ikan bilis di dalam sambal tumis tadi.Nak goreng berasingan dan masukkan kemudian selepas sambal dah dimasak atau nak tumiskan sekali dalam bahan² tadi pun boleh juga.

Resepi Nasi lemak
Sambal Tumis
Bahan bahan:
1 mangkuk ikan bilis
1 biji bawang besar - hiris
2-3 sudu besar gula pasir
Sedikit gula merah/gula Melaka
Garam
Air asam jawa/asam keping
Bahan kisar:
1/2 mangkuk cili kisar/20 tangkai cili kering - direbus dan ditos
2 biji bawang besar - boleh juga guna bawang merah
3 ulas bawang putih
1 inci halia - opsyenal
Sebesar ibu jari belacan bakar - opsyenal
Cara cara:
Panaskan minyak yang banyak, tumis bawang besar hiris sehingga naik bau sahaja. Masukkan bahan kisar dan kacau rata. Perlahankan api dan terus dikacau dengan api perlahan sehingga cili benar benar masak dan terbit minyak. Ianya memakan masa agak lama. Jika minyak kurang, bolehlah ditambah ketika menumis. Macam mana nak tahu kalau ianya telah garing? Minyak tumisan akan mula berbuih sedikit. Itu tanda dah garing.
Setelah bahan tumisan garing, masukkan sedikit gula terlebih dahulu dan kacau rata. Gula akan menjadikan warna sambal cantik dan berkilat.
Masukkan sedikit air mengikut kepekatan sambal yang disukai. Masukkan air asam jawa/asam keping, garam dan ikan bilis. Nota: warna sambal lebih cantik jika menggunakan asam keping.
Kacau rata sehingga sambal masak dan mesra.
Nota:
Sambal lebih sedap jika disediakan sehari sebelumnya.
Ikan bilis boleh digoreng sehingga layu, jika suka.
Nasi Lemak Sedap Dan Tahan Lama
Bahan bahan;
Beras - basuh dan tos
1-2 helai daun pandan - carik dan simpul
Sedikit garam
1 - 2 inci halia - hiris kasar
1 cawan santan pekat/1 kotak santan kotak
Cara cara:
Masak nasi dengan air secukupnya, iaitu bergantung kepada jenis beras masing masing. Biasanya paras air dalam kurang 1 inci atau satu paras garisan di jari.
Masukkan garam dan juga daun pandan yang dicarik. Mesti dicarik bagi menambah aroma daun pandan. Masukkan dalam rice cooker dan masak seperti biasa.
Bila mendidih dan air hampir kering, masukkan hirisan halia dan santan pekat tadi. Kacau rata. Sambung masak sehingga nasi masak sepenuhnya. Siap untuk dihidangkan.

2 sk serbuk stok ayam
5 akar ketumbar
3 akar daun bawang
1 1/2 liter air
2 sk lada sulah
1/2 sk garam
2 bahagian paha ayam
Minyak masak
Bahan-Bahan (Perapan Ayam)
Kicap
2 sk sos tiram
1 sb madu
1/2 sk lada hitam
Minyak (secukupnya)
Bahan-Bahan (Nasi)
2 cwn beras (dibasuh)
2 cwn air rebusan ayam
24 gm mentega
2 ulas bawang kecil (dihiris)
1/2 biji bawang besar (dihiris)
2 ulas bawang putih (dihiris)
1 inci halia (dihiris)
1 daun pandan (disimpulkan)
2 biji bunga lawang
4 biji buah pelaga
2 batang kayu manis

1. Tumis bawang putih, bawang kecil, halia dan bawang besar di dalam periuk. Kacau sebati.
2. Masukkan sup bunjut, akar ketumbar dan akar daun bawang. Kacau sekata.
3. Masukkan rempah sup dan kacau sehingga naik bau. Tuangkan separuh liter air dan kacau seketika.
4. Tambahkan ayam dan satu liter air. Masak sehingga ayam lembut.

2 cinnamon sticks

Ingredients (Chili Sauce)
10 dried chilies (deseeded and boiled)
handful of bird’s eye chilies
1/2 lemon (squeezed)
4 cloves shallot
3 cloves garlic
1/2 tsp of salt
3 tsp of brown sugar
2 tsp of chicken stock powder
150 ml water
Ingredients (Soy Sauce)
1 cup of chicken stock
1/2 cup of soy sauce from the marinated chicken
Cooking methods (Soup)
1. Saute garlic, shallot, ginger and onion inside a pan.
2. Put in soup spices, coriander roots and scallion roots. Stir well.
3. Put in soup powder and stir until fragrant. Pour in half litre of water and stir for a while.
4. Then, add in chicken and one litre of water. Cook until the chicken is softened.
5. Cook soup for a while and season with salt, white pepper and chicken stock powder.
6. Cook until the soup bubbling and reserve the chicken in a bowl.
Cooking methods (Chicken)
1. Put in soy sauce, oyster sauce and honey. Coat boiled chicken thoroughly.
2. Season the chicken with salt and marinate it for an hour.
3. Preheat cooking oil and deep fry at medium heat until it is fully cooked.
4. Lift up and drain excess oil off chicken. Now, it’s ready to be served.
Cooking methods (Rice)
1. Heat the pan, cook butter until fully melted and sauteed cardamoms, star anise and cinnamon bark until fragrance.
2. Put in sliced garlic, ginger, shallot, onion and knotted pandan leaf. Saute them until golden brown.
3. Place washed rice inside a rice cooker.
4. Lastly, pour in chicken stock sauteed ingredients. Mix them well and cook seasoned rice.
Cooking methods (Chili sauce)
1. Using the blender, blend dried chilies into paste.
2. Then, put in bird’s eye chilies, shallot and garlic. Blend them until well-combined and smooth in texture.
3. Pour the blending mixture into the pot, add water and cook until bubbling.
4. Lastly, season the sauce with salt,chicken stock powder, lemon juice and sugar to taste.
5. Chili sauce is now ready to be served with the chicken and rice.
Note: Brown sugar can be replaced with granulated sugar.
Cooking methods (Soy Sauce)
1. Mix chicken stock with the balance of soy sauce from the marinated chicken.
2. Mix them well soy sauce is now ready to be served.

人參糯米雞Ginseng Chicken Rice
重點秘訣:圓糯米要先泡水,米芯才能煮透。
Key Tip: First soak the round glutinous rice in water so that the rice can be cooked through the core.
材料:
小土雞1隻、圓糯米160公克、薑片10公克、人參鬚20公克、紅棗5顆
Ingredients:
1 small free range chicken, 160 grams round glutinous rice, 10 grams ginger, 20 grams ginseng, 5 Jujube red dates
調味料:
米酒50㏄、鹽1茶匙、水1000㏄
Seasoning:
50cc rice wine, 1 teaspoon salt, 1000cc of water
作法:
1.圓糯米洗淨泡水1小時。
2.將小土雞放入電鍋外鍋中,再將圓糯米塞入雞腹中。
3.接著加入薑片、參鬚、紅棗,再加入水、米酒、鹽,蓋上鍋蓋。
4.按下開關,煮約1個半小時至雞肉軟爛即可。
Preparation Method:
1. Soak the round glutinous rice for 1 hour.
2. Place the small chicken into the outer pot of the cooker, and stuff the chicken belly with round glutinous rice.

花雕雞鍋Shaoxing Rice Wine Chicken Pot

作法:
剁塊仿土雞 1/2隻、芹菜段 120公克、蒜苗段 100公克、柳松菇 150公克
Ingredients:
Cut 1/2 of a free range chicken, 120 grams of celery, 100 grams of garlic cloves, 150 grams of chestnut mushrooms (velvet pioppino)
辛香料:
薑片20公克、蒜片10公克、乾辣椒10公克、蔥段30公克、花椒5公克
Spices:
20 grams ginger, 10 grams garlic slices, 10 grams dried chili pepper, 30 grams green onions, 5 grams Sichuan pepper
火鍋料:

5.待鍋內的雞肉及料吃完後,再加入高湯及火鍋料煮至滾,一鍋兩吃。

調味料:
米酒50㏄、鹽1茶匙、水1000㏄

1.烏骨雞放入電鍋外鍋中、塞入一半的蒜仁。
2.再加入另一半的蒜仁、薑片、枸杞、杏鮑菇片。

When you mention pig trotters with vinegar, most people will have that preconceived notion that it’s a confinement dish. Traditionally, mummies eat this dish during confinement to keep the body ‘warm’. Ginger is added because it is believed to have similar properties.
Now, apart from the above mentioned, this is a decadent indulging pot of goodness. Imagine glistening gelatinous skin coupled with the perfect balance of sweetness, sourness and flavours from the black vinegar. That, PLUS the the aroma of ginger… wow! To save time, we made this in a pressure cooker in just 30mins, YES, melt-in-your-mouth tender trotters!
Definitely a dish that MEN would love to devour too! (with rice of course!)
