Homemade Chocolate Peanut Butter Muffins. Getting my #FridayFix. Yummy! 😋 Oh did I mention they're healthy & absolutely guilt-free? 😱 Tag someone who needs a healthy treat.
I was craving for chocolate muffins, instead of going out and indulging in one, which I know will make me feel good for 5 minutes and crappy afterwards, I decided to bake them instead! It's soooo quick, easy and tastes AMAZING!

INGREDIENTS
- 1.5 cups Wheat or White Flour
(I used half and half)
- 3 medium Bananas, sliced
- 1/4 cup Cocoa Powder
- 1/2 cup Plain or Greek Yoghurt
- 1/4 cup Honey
- 1/4 Crushed Almond Nuts
- 2 tbsps. Peanut Butter
- 1 Egg
- 1 tsp. Baking Soda

STEPS
- Preheat oven to 180 Celsius or 350 Fahrenheit.
- In a blender, combine bananas, Greek yoghurt, honey and peanut butter. Blend until smooth.
- Transfer into a large bowl and whisk in the egg.
- Then add the dry ingredients; flour, cocoa powder, crushed almonds and baking soda. Mix until you get a thick batter.
- Divide the batter evenly into 12 muffin cups.
- Bake for 20 - 25 minutes until a toothpick inserted in the centre comes out clean.
- Allow them to cool to room temperature before serving.

Onsen Manjyu (温泉饅頭) is a very popular gift from Onsen (hot spring). It is a brown soft steamed bun filled with Azuki bean paste. The bun is made with brown sugar so it's color is brown. The very first Onsen Manjyu is said to have originated at Ikaho Onsen in Gunma prefecture. Ikaho Onsen (hot spring) water color is brown, so the Onsen Manjyu color is brown. And now it is spread nationwide.
We've been to Hakone Onsen (hot spring), so we decided to make Onsen Manjyu at home 😋

How to Make Onsen Manjyu (Hot Spring Steamed Buns Recipe)
Difficulty: Easy
Time: 1hr
Number of servings: 16 pieces
*US 240ml cup measurements
Ingredients:
1 cup (300g) strained Azuki red bean paste
1/2 cup (90g) brown sugar
3 tbsp. water
1/2 tsp. baking soda
1 tsp. water
1 cup (120g) all purpose flour
extra flour for dusting
Directions:
1. In a microwavable bowl, place brown sugar and 3 tbsp. water. Microwave for 1.5 min then mix well.
2. Place it in a large bowl, add baking soda diluted with 1 tsp, water, and mix well.
3. Sift in all purpose flour and mix well.
4. Divide the bean paste into 16 pieces and roll into balls.
5. Divide the dough into 16 pieces, flatten out the dough with a rolling pin, place the bean paste, and wrap with the dough. *not perfectly wrapped is okay don't worry!
6. Place Manjyu on a plate, place the plate in a frying pan, add water up to 1/3 high, cover (with a lid wrapped with towel to prevent water dripping), and cook on medium for 8 minutes.
You can wrap with plastic wrap and keep in the fridge for a few days or freezer for a week. Defrost at room temperature to eat.

How to Make Pumpkin-Shaped Melonpan
Difficulty: Very Easy
Time: 60min
Number of servings: about 18 mini (6cm/2.5inch) Melonpan
Ingredients:
18 6cm/2.5inch rolls (small bread)
4 tbsp. (50g) butter (softened)
3 tbsp. granulated sugar
1 egg
Wilton Icing Gel Color red and yellow
vanilla extract
1 cup (120g) all-purpose flour
1/3 tsp. baking powder
granulated sugar for coating
18 pistachios, walnuts, or pumpkin seeds
Directions:
1. If you can't find a round roll (bread), cut out a small roll (bread) using a round cookie cutter.
2. Beat butter and sugar until creamy, add egg little by little and mix well. Add Wilton Icing Gel Color red and yellow to make orange cookie dough. Then add a few drops of vanilla extract.
3. Sift in flour and baking powder and mix well.
4. Spoon the cookie dough onto the bread, wrap with plastic wrap to coat the bread with the cookie topping.
5. Roll in the granulated sugar and place it on a parchment paper. With a scraper or a knife, score the cookie dough in random vertical lines. Insert pistachios on top of each buns.
6. Preheat oven to 350F (180C). Meanwhile place the buns in the fridge to set. (Up to 30 minutes is ok)
7. Bake at 350F (180C) for 10 minutes. (Depending on the heat of the oven, cooking time may differ, so please watch out.)
