說到法式甜點的 #台灣味,怎麼能不提萬華的 菓實日?
前幾年就為菓實日將台灣傳統文化融入法式甜點的創意心折,如果說巴黎有日式銅鑼燒店 Pâtisserie TOMO 作為日法甜點水乳交融之作的代表,(參見 #法式甜點學 p.156, 241, 336, 337),菓實日便似乎象徵著法式甜點真正能在台灣生根、與在地庶民文化結合開出的芳草奇卉。TOMO 以法式甜點技法重新詮釋日式甜點,外型融入了銅鑼燒與法式經典(如 Paris-Tokyo、檸檬塔、反轉蘋果塔、日本威士忌聖托佩塔等)、口味也兼有兩者之長;菓實日則不受限於單一類型糕點,代表作「紅龜」與「滷肉飯」大膽地用法式蛋糕(entremets)重新詮釋了他們心目中的台味與台灣精神。
數年前有幸品嚐過「紅龜」,一直對酒釀慕斯加紅豆餡既新奇又傳統的搭配念念不忘。這次趁著留在台灣的時間,又去拜訪了他們幾次,還剛好遇到他們在籌備線上課程期間,有幸飽覽饅頭主廚的精彩作品,並品嚐了這碗讓我一直好奇不已的「滷肉飯」。「滷肉飯」不僅有著法式甜點繁複多層的特質,還非常奇妙地揉合了台味無比的混搭創意:以蜜漬地瓜丁加焦糖醬模擬了滷肉飯的靈魂元素——滷肉與滷汁、米香白巧克力薄殼包裹著八角慕斯則成了晶瑩的米飯,最妙的是一匙舀起,還會意外地發現碗底的驚喜:肉鬆加自製酥菠蘿(奶酥、crumble)和生乳酪蛋糕體,最上方點上一片鮮綠的香菜,就變成了一碗技法完全是法式、但風味組合與精神卻100%台味的滷肉飯造型甜點。
前兩個禮拜我提到「是否有 #台灣神髓?」、「什麼是台灣神髓?」、「台灣神髓是否能被表現出來、又該怎麼表現?」,而菓實日的「滷肉飯」幾乎是不偏不倚地回答了這些問題。所有曾經必須對外國友人介紹台灣飲食的朋友,都會知道「台灣味」、「台菜」非常難以定義與畫出界線,因為台灣就是一個充滿了移民的島嶼、乘載了各種不同文化混雜的歷史,尋求「純粹的」台味很難不落入徒勞無功的下場。事實上台灣的活力,確實也來自於那種能將不同文化輕鬆且毫不做作地混搭、交融的自在。菓實日的「滷肉飯」恰恰體現了這種看似大膽奔放、但成果無比協調的餘裕。多達八層,且有香菜、地瓜、八角、肉鬆等台灣常見的料理元素,被妥貼地收納在這個「法式蛋糕」中。或許你無法一口氣分辨出每一種元素與層次,但它們卻如此完滿、歡欣地在嘴裡融合在一起,讓人不由得脫口而出「好吃」!哎呀,這不正是「台灣」和「台灣神髓」嗎?

Kajitsu, a hidden treasure in Taipei’s Wanhua district, is a little French pastry shop that makes Taiwan-inspired pastries. Chef Mantou transforms traditional festive pastry “Âng-ku-kóe” and “Lu Rou Fan”, Taiwan’s national dish, into French entremets. It is not unusual that food adapts to local tastes when it travel overseas. It takes place in different forms. Take French pastries for instance, adding local ingredients in the classics is one way. For example, Japanese chefs may use yuzu to replace lemon when making their tarte au citron. Employing foreign skills to revisit or transform one’s traditions is another. Pâtisserie TOMO in Paris that combines Dorayaki and classic French pastries serves one of the best examples. In Taiwan, Kajitsu is another interesting case.
“Âng-ku-kóe”, “red tortoise cake”, used to be the most popular local festive pastry in old times. It’s shaped as a turtle and coloured in red (sometimes in green) since turtles are a symbol of longevity, fortune, and fame in Taiwan. Red is also the lucky color here. In Kajitsu, chef Mantou tries to transform this traditional delight into a French entremets. She keeps the sweet red bean paste in the filling and matches it with sweet rice wine mousse to modernise the traditional taste. “Lu Rou Fan”, braised pork rice, one of the most beloved dishes that can be seen everywhere in Taiwan, is the chef’s another brilliant creation. Mantou takes sweet potato confit and caramel sauce to create a “trompe l’œil” of the famed braised pork and its sauce, star anise mousse hints the indispensable spice during the braising, the rice crispy and white chocolate coating shape the bowl of rice, and the unusual combination of pork floss and cheesecake gives a little surprise beneath. A refreshing coriander leave on top takes you to the humid summer of Taiwan instantly. Lots of seemingly conflicting ingredients are grouped together, resulting in, however, an incredible harmony. It is a fascinating dessert that can only be created by a Taiwanese pastry chef as it parallels Taiwan’s history and reflects its source of energy: immigrants with diverse origins, cultures and values cohabit and learn to evolve together.
As Kajitsu’s pastries are deeply rooted in the everyday life of Taiwan, there are also other intriguing creations such as petits fours with motifs of old tiles and the sweet “Doom crackers” inspired by the role of the god ruling the Qing Shan Temple in Wanhua district.

If you are a fan of US TV series, you’ll be familiar with the morning breakfast routine: Each family member pours a mound of cereal into a bowl, adds enough milk to send it flowing over the top, before getting stuck into their sugary start to the day. 如果你是美國電視劇粉絲的話,你一定很熟悉這樣的例行早餐場景:家裡的每個 人都往碗裡倒了一堆穀物,再從上頭倒入牛奶,接下來就可以開始享用他們甜蜜蜜的 早餐,展開新的一天。
For generations, cereal has been the bedrock of the American breakfast, but it now seems to be losing some of its momentum. Shoppers are seeking out “high protein and fiber content and natural ingredients,” the US-based research firm Mintel Group Ltd. said in a report. “Consumers today believe cereal is overly processed and doesn’t contain enough nutrients.” 位於美國的調查公司英敏特集團有限公司在一份報告中指出,消費者們正在尋找 「高蛋白又富含纖維的自然食材。」「如今的消費者們認為,穀物被過度加工,不夠 營養。」

Another big challenge for the industry is the ever-changing pattern of breakfast eaters, with an emphasis increasingly being placed on satisfying time-squeezed lifestyles. This desire for convenience seems to be especially evident among millennials – those aged 18 to 34. 燕子築巢,然後被佔有、焠鍊成一種殘忍卻被定義成「造福人們」的燕窩(結果)。

This song was the one about Qingfeng himself, saying the value of being a singer.
Qing Feng thinks he, as a songwriter, is pretty much like swallows build their nests, and then being possessed into the edible bird's-nest which is defined as the food "benefiting people".
He has no idea of at all how the song would be treated in the end, or whether the song will just become the profitable commodity.
But the most important and touching for him is that when hearing people telling him that the song touches their hearts and at some certain moments, people thinks of him.
I am quite touched by what Qing Feng tries to express through the song.
I think the true value of a creator, whether a songwriter, editor or performer, lies in the moment of touching people's heart. You are not creating for impressing someone; instead, you feel the world and write down the most true feelings in your heart.
So I appreciate it that everyone of you coming to my channel supporting me, showing your love and leaving all the comments.

這首歌就是描述失去對自己來說意義重大的人的心境!
在另一個人面前可以放下內心的武裝和防衛,與這個人的關係中,那個執著並且渴望以任何形式被定義的自己,卻可以溫柔地融化。
這是美妙的過程,一段如此美好的關係會帶來力量,使人從中成長,但卻不一定等於永恆。
傷心難過是必然,但長大之後的我似乎更會想著不是每種失去都是損失,這些事情會有它的價值,而不只是失去就可惜,錯過就遺憾這樣的心情。
這是你的人生屬於你自己的故事。你可以選擇哪些人停留在你的故事中,而哪些「失去」同樣也可以選擇以「獲得」的心態來看待。
如果明白這樣道理,那麼與其執著於永恆,不如簡單地珍惜當下,享受與重要的人相處的時刻,真正歡喜於此時此刻的我們,有幸相互陪伴,一起同行的時光。
歲月旅程中有如此重要的人相陪,那些光陰也不算虛度。
沒有一場相遇是不值得,我們恰巧路過了彼此的世界,在彼此的年月中留下了一頁。但故事需要翻頁,在人來人往月台上終究必須搭上那班離開的列車,不管是誰如果只能陪對方到這裡了,那就收藏好那段鑲在記憶中同行的旅途,把所有的失去都變成美好的回憶吧!

Yay, this song is about people's state of mind of people when someone important is not here!
It's so wonderful if you can let yourself guard down and just fall into the arms of the important one.
In the relationship like this, ya'll get strength and will grow from it, but it does not necessarily mean the eternity of the relationship.
Sad of course, but with the time goes by, I seem to think that not every loss is the "loss", and there may be some value behind all these things.
This is a story of your own life. You are able to choose who to stay in your story, and of course the mentality of seeing the "loss" as some sort of "gain".
If you understand, instead of going for the so-called eternity, simply cherish and enjoy the moment with the important one.
There are such important people in our journey for some years, and those times are not wasted.
No encounter is accidental, so we pass by each other's world, and we cannot skip chapters.
We have to read every line and meet every character and won't enjoy all of it and some will make you cry for weeks and you will have moments when you don't want the pages to end. But you have to keep going. Stories keep the world revolving. Live yours =]

Billie Eillish《Bad Guy》小提琴版本 | Violin cover by Lin Tzu An of Bad Guy by Billie Eillish
一頭藍色的長髮,極度厭世的眼神,但卻有出人意表的天使歌聲,17歲的Billie Eillish的Bad Guy在2019年橫空出現在大家面前。
老實說這首歌一開始聽覺得普通,但聽久了反而開始上癮,甚至愛上這首歌,所以就決定cover啦!
尤其是副歌的部分,洗腦又輕快好聽,搭配著重低音和強烈的節奏,讓人很想要一聽再聽。
她的曲風很難定義一種風格,黑暗怪異曲風,搭配上時而低沉時而空靈的聲音。
而除了黑暗元素,比莉天生的憂鬱與敏感都體現在她的音樂上,不過我想就是因為比莉的音樂如此赤裸裸,既自信又脆弱,所以才會如此容易引起聽眾的共嗚。
拍cover的時候都要一直忍著不要笑,大家喜歡這種壞風格嗎?

With the long blue hair and eyes that looks like extremely tired of everything in the world while with her unexpected voice like an angel, Bad Guy from Billie Eillish went viral in 2019.
To be honest, Bad Guy sounded ordinary at first, but after keeping listening it for a while, I am literally addicted to it and even fell in love with this song, so here comes the cover this week!
The chorus part is especially brainwashing and nice, with the bass and the strong rhythm, it just makes people want to listen again and again.
Billie's style is difficult to define (how why we should define someone or something, right? )
It's like dark and weird but with the beautifully sweet and clear voice.
In addition to the dark elements, Billie's depression and sensitivity are both reflected in her music.
I think her music is so true, confident and fragile that speaks for the reasons people love her.
It's so hard not to laugh when shooting for the cover, yea not a smile was allowed!
