The Dutch Baby Pancake with Prosciutto Ham & Burrata Cheese, bit of Thyme Inside 🌿🧀. Served with Maple syrup on the side. This is the must order Signature dish here, with a Choux or Pop Over type of pastry batter. I also saw this recipe at some other Cafes too, it seems to be a trendy Tokyo thing nowadays... I liked the idea of this, but somehow I thought the syrupy sauce poured on the Ham & Burrata cheese was a bit clashingly odd, or I should say even if for me some certain Cheeses work really well with Honey 🍯, in this particular case I actually preferred the recipe to have more saltiness direction instead.

In comparison & despite the Dutch namesake, Dutch Baby Pancakes baked on an iron skillet are more of an American invention. 大家早安啊😍不知道大家有沒有吃早午餐啊?荷蘭寶貝鬆餅其實源自德國又叫德國鬆餅,口感介於美式鬆餅、布丁和泡芙皮三者的口感之間~老外拿來做一天早餐的開始,不過現在已經不限早餐了,全天都可以吃喔~甜鹹皆宜😋😋
這道食譜是我貪吃從網路上找到的,我換了配方,結果效果一樣不錯👏👏大家家裡有鑄鐵鍋的同學可以一起試試,做給家人一起享用喔!口感正點不輸給一般的荷蘭寶貝鬆餅😍
🥞生酮荷蘭寶貝鬆餅材料🥞(原食譜vs我的配方):
椰子油或是奶油(我用酥油)2 table spoon
無糖杏仁奶(我用椰漿比較稀的部分取代,也可用水)3/4 杯
全蛋3顆
原味蛋清高蛋白粉(我用花生麵粉取代)1/4杯
泡打粉 1 teaspoon
鹽巴 1 teaspoon
香草精 1/2 teaspoon �甜菊糖液 1/2 teaspoon (我用赤藻糖細糖粉代替)
👉作法:
1. 烤箱預熱220度,鑄鐵鍋放入兩大匙酥油在瓦斯爐上中火加溫(油要夠喔)
2. 接下來把所有的材料用攪拌器打勻,要表面有泡泡的程度(差不多一分鐘吧)
3. 鑄鐵鍋表面油溫微微熱氣上來,用一小滴麵粉水滴看看有沒有立即浮起來冒泡,有的話表示油溫可以了,就可以把麵粉糊倒進去
4. 讓它邊邊稍微澎起有點起泡,就可以連整個鑄鐵鍋放入烤箱,烤約20分鐘
5. 出爐前5分鐘,打開烤箱把澎起來的表皮部分用牙籤刺破,刺幾個小洞再關起來烤,這樣表皮才不會因為水氣出不來出爐後變的軟軟濕濕的。
6. 取出後可以加入喜歡的材料,我的版本很簡單就是奶油塊、糖粉、還有自製椰奶焦糖漿(再來教大家怎麼做 😋)其他參考作法在留言處👇)

German pancake - dutch baby
3 large eggs, room temperature
1/2 cup milk, warm
1/2 cup flour
2 tablespoons sugar
1/4 teaspoon salt
2 tablespoons butter to grease the pan
Mix all the ingredients above and then bake at around 210 degree celsius for about 15 mins.

Hi, everyone. :) Today we'll show you how to make a fluffy and delicious pancake: Dutch Baby.
Dutch baby pancake has many names, German Pancake, David Eyre Pancake, German Oven Pancake, Bismarck, Dutch Puff. According to Wiki, the idea of a Dutch baby might be derived from the German Pfannkuchen, but the current form originated in the US.
But no matter what it calls, the dutch baby is the easiest pancake breakfast or brunch you can make. Only few ingredients, one bowl, and one cast iron skillet or any oven-safe pan. It’s puff up super high in oven, because of the egg in the pancake while baking. Once out of the oven, the pancake collapses quickly, but the edges is still crispy on the outside, inside is tender like crepes.
This recipe is for a deliciouse small size dutch baby. We use 16cm cast iron skillet, but it can use any oven-safe pan or baking mold, like pie dish. You can serve it with pan or transfer to a platter. And you can enjoy it with jam, fresh fruits, lemon curd, peanut butter, maple syrup or an ice cream as you like. Hope you like this video. Dutch Baby Pancake Recipe
☞ baking mold: 16cm cast iron skillet
✎ Ingredients
large egg 1
all-purpose flour 32g
whole milk 45ml
granulated sugar 8g
ground nutmeg a pinch
unsalted butter 8g
vanilla extract 2g (optional)
lemon 1
powdered sugar for garnish
✎ Instructions
1. Place a heavy cast iron or a oven-safe pan in the oven. Preheat the oven to 210°C. Then heat uo the pan in 2 minutes.
2. Add an egg in a large bowl, beat until very frothy.
3. Sift flour and add to egg. Mix together until combine.
4. Add sugar, vanilla extract and milk. Then grate a little bit of nutmeg into the mixture and blend all ingredients until smooth.
5. Remove the cast iron from oven, be careful it's very hot. Place the butter and swirl the pan to melt the butter and coat the bottom and side of the pan.
6. Pour the batter into the pan, return pan to the oven and bake for 15~18 minutes. until the pancake is puffed and golden. Lower oven temperature to 150°C and bake 4 minutes longer.
7. Remove the dutch baby from oven, place the butter, squeeze some lemon juice, and then dust with powdered sugar. Serve immediately. You can serve from the pan or transfer to a serving dish.

荷蘭鬆餅有個趣味的典故,據說它最早是源自於德國,也稱之為德國鬆餅(German Pancake/Pfannkuchen),後來傳到美國後,因為當時正值二戰的時代背景,如果推出的甜點名字裡有一個德國的字樣,怕是會有點小敏感,因此店家就幫它取了 『Dutch Baby 荷蘭寶貝』的名字,沒想到反而更加出名,可這鬆餅卻壓根跟荷蘭一點關係也沒有。
但不管如何,荷蘭寶貝鬆餅有個澎派浮誇的外表,因為食材中的雞蛋,讓它在烤箱中不斷的澎脹,出爐遇冷後會有點回縮,但邊邊酥脆、內裡柔軟如可麗餅的口感很是討喜,而碗狀的造型很可愛也方便擺上各種新鮮水果、冰淇淋或鮮奶油,吃的時候可以用刀叉像切披薩一樣地享用。
荷蘭寶貝鬆餅一般是使用鑄鐵鍋來烤,但也可以用可進烤箱的平底鍋或蛋糕烤盤來烘烤,這份食譜簡單易學,並另外分享三種吃飯供大家參考。
Dutch Baby除了吃甜口味,也可以做成鹹口味的,所以很適合當作早午餐或下午茶,希望大家會喜歡這支影片。:D

Dutch Baby Pancake 荷蘭寶貝鬆餅怎麼作呢?
下面是 荷蘭寶貝鬆餅 的作法與食譜:
☞ 這份食譜使用的是直徑16cm的鑄鐵鍋來製作
📌 烤模尺寸換算方式:

✎ 材料/ Ingredients
蛋 1顆
中筋麵粉 32g
全脂牛奶 45ml
細砂糖 8g
肉豆蔻 一小撮
無鹽奶油 8g
香草精 2g (若無可省略)
檸檬 半顆
裝飾用的糖粉 適量
✎ 做法/ Instructions
1. 準備一個16cm的鑄鐵鍋或可以進烤箱的平底鍋,放進烤箱裡一起用 210°C. 預熱
2. 攪拌盆裡打入一顆雞蛋,打散但不用打發
3. 加入過篩的麵粉,與蛋液混合均勻,不要有結塊
4. 加入糖、香草精與牛奶,然後刨一點肉豆蔻,將所有的食材混勻
5. 預熱完成後,將加熱過的鑄鐵鍋取出,要小心,鍋子很燙,在鍋裡放入奶油,用刷子將融化的奶油均勻的塗抹鍋子
6. 倒入麵糊,然後把鑄鐵鍋放入烤箱,以 210°C. 烘烤15分鐘,接著再降至 150°C. 續烤4分鐘
7. 出爐後,趁熱放入一小塊奶油,擠上檸檬汁,然後再灑上糖粉,可以就著鍋子吃,或將鬆餅移到盤子上享用,趁熱吃。另外也可以搭配新鮮水果或冰淇淋、鮮奶油吃哦。
